Stephen's Cake Invention


Stephen has been experimenting in the kitchen. :) I love this project that I found (the kids love it too!):
Invent Your Own Cake at I Can Teach My Child!

Cake
2 carrots
1 cup spinach
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
2/3 cup cocoa powder

pinch of black pepper

3 eggs
2 sticks butter, melted
2/3 cup oil
1 1/2 teaspoon vanilla
2/3 cup maple syrup
2/3 cup sour cream
2/3 cups applesauce
2/3 cup blueberries
1 cup chocolate chips

Icing
1 cup powdered sugar
2 Tablespoons milk

1. Preheat oven to 350 degrees. Grease a bundt pan and 1 muffin tin and set aside.
2. Boil carrots and spinach until they are soft. Blend them in a food processor until smooth. Set aside to cool.
3. In another bowl, mix flour, cocoa, pepper, baking soda and baking powder. Set aside.
4. Pour carrots and spinach mixture in a mixing bowl. Mix in eggs, butter, oil, vanilla, syrup, sour cream, and applesauce. Fold in flour mixture. Fold in blueberries and chocolate chips.
5. Fill 1 muffin hole with batter (this will be used to crumble over the finished cake). Pour remaining mixture into prepared bundt pan. Bake muffin for 30 minutes. Bake Bundt cake for 1 hour. Remove from oven, and let cool on wire rack before removing from pan.
6. To make icing, whisk milk into powdered sugar. Drizzle on top of the cooled cake. Crumble the muffin in your hands and sprinkle crumbs on top of the cake.
